Rainbow Vegetable Pasta

    Adding lots of vegetables to risoni pasta not only makes it colourful, but also appealing for kids to eat! Serve it with their favourite grilled meats or add some grated cheese for a vegetarian meal.

    Serves: 4 

    • 300g risoni pasta
    • 25g butter
    • 1 small yellow capsicum, finely chopped
    • 1 zucchini, finely chopepd
    • 1/2 small red onion, finely chopped
    • 150g cherry tomatoes, quartered
    • 1 carrot, finely chopped
    • 1/3 cup shredded fresh basil
    • 1 tablespoon lemon juice
    • salt and freshly ground black pepper, to taste

    1. Cook risoni in plenty of boiling salted water for 6 to 8 minutes according to packet instructions or until tender.
    2. Meanwhile, heat butter in a large frying pan over moderate heat. Add vegetables; cook and stir for 3 to 4 minutes or until tender. Add basil, juice and risoni pasta; toss until heated through and season with salt and pepper.
