Easy Avocado Hummus

    A beautifully green blend with fresh lime and spinach, this easy avocado hummus is the key component of flavour in any bento box with dippers.

    • 1 (400g) can chickpeas, rinsed and drained
    • 1/4 cup water
    • 2 tablespoons tahini
    • 1 tablespoon fresh lime juice, or to taste
    • 1 teaspoon sea salt, or to taste
    • 1 clove garlic, roughly chopped
    • 1/2 teaspoon ground cumin
    • 1 1/2 large ripe avocados, pitted and peeled
    • 100g baby spinach leaves
    • 2 tablespoons extra-virgin olive oil

    1. Place chickpeas, water, tahini, lime juice, salt, garlic, and cumin in a food processor. Puree until smooth.
    2. Add avocado, spinach and olive oil; puree until creamy. Serve.
