Vegan Quinoa Porridge

    This vegan porridge contains quinoa, oats, coconut and cacao nibs (low-carb roasted, coarsely ground cocoa beans) for a chocolate flavour.

    • 1/4 cup (40 g) quinoa
    • 1/4 cup (20 g) rolled oats
    • 2 tablespoons flaked coconut
    • 2 tablespoons cacao nibs
    • 1 tablespoon molasses or treacle
    • water to cover

    1. Combine quinoa, oats, flaked coconut, cacao nibs and molasses in a pot; cover with water. Bring to a boil and cover.
    2. Reduce heat and simmer until quinoa and oats are soft, about 10 to 15 minutes. Add more water, 1 tablespoon at a time, if porridge becomes too dry.
