Avocado and Mango Salad with Crispy Bacon

    Avocado and mango are tossed with bacon, walnuts and lettuce and drizzled with a light vinaigrette to make this zesty and filling mango salad.

    Serves: 8 

    • Dressing
    • 1/2 cup white wine vinegar
    • 1/4 cup sunflower seed oil
    • 1 teaspoon white sugar
    • 2 teaspoons dry mustard
    • ground black pepper
    • Salad
    • 4 ripe avocados, diced
    • 2 mangoes, diced
    • lemons, juiced
    • 1 head iceberg lettuce, torn
    • 1 1/2 cups walnut halves
    • 6 rashers crispy cooked bacon, crumbled

    1. Combine vinegar, oil, sugar, mustard and pepper in a bowl. Mix well. Refrigerate dressing until ready to serve.
    2. Salad:

    3. Place avocados, mangoes and lemon juice in a bowl. Mix gently until just combined.
    4. Place lettuce in a large bowl or platter. Add avocado-mango mixture, walnuts, bacon and the dressing. Toss and serve.
