Marzipan potatoes are a classic Christmastime treat in Germany, called Marzipankartoffeln. They are easy to make from homemade marzipan and are gluten-free.

500g whole raw unpeeled almonds
500g icing sugar
3 tablespoons rose flower water or orange blossom water
a few drops of almond extract
unsweetened cocoa powder

Place the almonds in a heatproof bowl and cover with boiling water. Allow to soak and let cool until the almonds can be handled. Pour off the water and slip off the skins. Pat the almonds dry with kitchen paper.
Place the almonds in the bowl of the food processor and add icing sugar, flower water and almond extract. Process to a smooth consistency, stopping the machine several times to scrape down the sides.
Place the almond paste in a container with a lid or in a bowl and cover with plastic wrap. Let rest overnight.
The next day shape the almond paste to a roll about 1.5cm in diameter. Cut into 2cm pieces and shape into balls. Dredge in cocoa and place in an airtight container in a cool place for up to a month.
