Individual Cherry Tiramisu

    This quick and easy tiramisu-style dessert with black cherries is perfect for last minute entertaining. Simple to make but super impressive!

    Serves: 4 

    • 1 (415g) can stoneless black cherries in syrup
    • 3 teapoons instant coffee granules
    • 8 sponge finger biscuits
    • 250g mascarpone cheese
    • 2 tablespoons icing sugar
    • 1 teaspoon vanilla extract
    • 150ml thickened cream
    • 50g dark chocolate, shaved

    1. Drain cherries, reserving ½ cup of the syrup. Place coffee granules in a small jug; add 1 tablespoon boiling water and stir until coffee dissolves. Stir in reserved syrup.
    2. Divide sponge finger biscuits among 4 x 1 ½ cup-capacity serving glasses. Spoon coffee mixture over biscuits. Reserve 12 cherries. Divide remaining cherries among glasses.
    3. Place mascarpone, icing sugar and vanilla extract in a medium bowl. Using electric mixers, beat until smooth. Add cream and mix until smooth.
    4. Spoon mixture into glasses. Refrigerate for 30 minutes. Top with reserved cherries and grated chocolate. Serve.
