The combination of rich dark chocolate and spicy red chilli in these truffles provides a pleasant surprise for the taste buds. Silky smooth dark chocolate gives a sweet but slightly bitter flavour followed by the heat of the chilli.
Combine cream and chopped chocolate in small saucepan; stir over low heat until smooth. Stir in chilli. Transfer mixture to small bowl, cover; refrigerate 3 hours.
Working with a quarter of the chocolate mixture at a time (keeping remainder under refrigeration), roll rounded teaspoons into balls; place on tray. Refrigerate truffles for 2 hours or until firm.
Working quickly, dip truffles in melted chocolate then roll gently in hands to coat evenly; return to tray. Refrigerate for 1 hour or until firm.
