Prawn and Avocado Caesar Salad

    I like to use a combination of mayonnaise and buttermilk in this Caesar dressing to reduce the amount of saturated fat. Shortcut bacon is also leaner than middle bacon rashers, helping to reduce the calories.

    Serves: 4 

    • 1 tablespoon olive oil
    • 4 rashers shortcut bacon
    • 1/4 cup whole-egg mayonnaise
    • 1/4 cup buttermilk
    • 2 teaspoons wholegrain mustard
    • 2 anchovy fillets, finely chopped
    • 1 clove garlic, crushed
    • 1 cos lettuce, leaves torn
    • 1 avocado, diced
    • 2 slices bread, toasted, cut into 1cm pieces
    • 24 large cooked prawns, peeled

    1. Heat the oil in a large frying pan and heat over medium-high heat. Cook the bacon for 2-3 minutes each side or until golden and crisp. Remove from pan. Chop coarsely.
    2. Combine the mayonnaise, buttermilk, mustard, anchovy and garlic in a small bowl.
    3. Place the lettuce, avocado, bread, prawns and bacon in a large bowl. Add three-quarters of the dressing and toss to combine. Serve salad drizzled with remaining dressing.
