Cook the pasta in a large saucepan of boiling salted water, according to packet directions, until al dente. Drain; return to pan.
Heat the oil in a large frying pan over high heat. Cook and stir bacon for 3-4 minutes or until bacon is crisp. Add the garlic and shallot and cook for 1 minute.
Add the cream and tomato and bring to the boil. Reduce heat to low and simmer, uncovered, for 5 minutes or until sauce thickens. Season to taste with salt and freshly ground black pepper. Add spinach and cook and stir for 1 minute or until spinach wilts.
Add the sauce mixture and cheese to pasta and toss to combine. Serve pasta sprinkled with the pine nuts.
