Roast potatoes with feta

These potatoes are the best accompaniment to a BBQ or roast dinner. Your friends and family will beg you for the recipe.

    1 person made this

    • 5 decent sized potatoes (the ones with the dirt still on them)
    • 1 lemon
    • Olive oil
    • Oregano (dried)
    • Salt (the one in the grinder)
    • Pepper (the one in the grinder)
    • 3-5 cloves garlic
    • 100g Dodoni Feta (any crumbly Greek feta will be ok as a substitute)

    1. Pre-heat the oven to 210 degrees C (fan forced)
    2. Peel potatoes and cut into bite sized pieces
    3. Scatter them over a baking dish so each piece of potato touches the bottom
    4. Drench the potatoes in olive oil
    5. Cut the lemon in half and squeeze the juice from each half over the dish
    6. Dust the potatoes generously with salt, pepper and oregano
    7. Grate 3-5 cloves of garlic into the dish
    8. Give everything a good mix so each piece of potato has a nice coating of the herbs, lemon and oil, and so the garlic clumps disperse.
    9. Bake for 45-60 mins, turning over the potatoes every 20 mins or so
    10. Once you're happy with the colour and crispness, remove from the oven and transfer to a serving bowl.
    11. Crumble most of the feta over the potatoes and stir through. Finish with a final sprinkle of the remaining feta and some sea salt just before serving.
    12. Enjoy!

I place the potatoes, herbs and liquids into a tupperware container to give it a really good shake before transferring to a baking dish. This way the garlic will disperse more successfully and it will roughen up the edges of the potatoes so they turn beautifully crispy and brown in the oven.
