A different and unique ice cream that calls for a very familiar ingredient. The wheaten biscuits give this simple vanilla ice cream a wonderful texture and flavour.

Ingredients
Serves: 8
500ml double cream
2/3 cup (150g) caster sugar
1 pinch salt
1/2 vanilla bean
6 wheaten biscuits, lightly crushed

Combine cream, sugar and salt together in a large bowl. Split vanilla bean in half lengthways, scrape seeds into the bowl. Stir well.
Pour cream mixture into ice cream maker and process according to manufacturer's directions. When semi-frozen, sprinkle in the crushed biscuits. Continue to process until desired consistency is reached.
Serve in scoops.
Note:
Vanilla extract can be used in place of the vanilla bean.

Leftover ice cream can be stored in the freezer for up to three days.
