Walnut and roast ham linguine

    40 minutes

The perfect dish for using up leftover Christmas ham! Linguine is tossed with thin pieces of ham, toasted walnuts and shallots, then sprinkled with freshly grated Parmesan and parsley.

    1 person made this

    Serves: 6

    • 450g whole wheat linguine
    • 4 tablespoons olive oil
    • 4 cloves garlic, minced, or more to taste
    • 2 shallots, chopped
    • 1 teaspoon dried chilli flakes
    • 1/2 cup walnuts, chopped
    • 225g leftover cooked ham, thinly sliced
    • 1/3 cup freshly grated Parmesan cheese
    • 1 tablespoon freshly chopped parsley

    Preparation:15min  ›  Cook:25min  ›  Ready in:40min

    1. Fill a large pot with lightly salted water and bring to the boil over high heat. Once the water is boiling, stir in the linguine and return to the boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 8 to 10 minutes. Drain well in a colander set in the sink.
    2. Heat the olive oil in a large pan over medium heat; add garlic, shallots and chilli flakes. Cook and stir until the garlic is fragrant but not browned, about 3 minutes. Stir in the walnuts and cook until the nuts give off a toasted smell, about 2 minutes; stir in ham slices and cook the mixture until the ham is hot and beginning to brown, about 5 more minutes.
    3. Lightly toss the pasta with the ham mixture in the pan; sprinkle Parmesan cheese and parsley on top and serve.

Delicious! Served this with a spinach & strawberry salad for a light and tasty dinner. Everyone loved it! Thanks for the great recipe  -  08 Apr 2012  (Review from Allrecipes USA and Canada)

I NEVER review anything online but felt I needed to with this recipe. It was completely different than our usual rotation of dinners and the flavor was awesome! The only adjustments I made was cutting the red pepper to 1/2 tsp. (still plenty spicy for us) and using 12 oz of whole wheat spaghetti. I would probably use 8-10 oz next time. (there are only 3 of us) This is really worth a try. Awesome flavors and looks impressive too! I cut the ham into small matchsticks per the Allrecipes magazine.  -  03 Apr 2017  (Review from Allrecipes USA and Canada)

Phenomenal! I added julienne'd zucchini JUST after stirring in the ham. Absolutely awesome. Allowed individuals (hubby & myself) to add the parm cheese as we served, avoiding pasta that was stuck together & oily on reheat. This recipe is a keeper. I'm passing it along to my boys and relatives. (Next time, I'm adding in some sauteed mushrooms. YUM!)  -  01 May 2019  (Review from Allrecipes USA and Canada)
