Peach and Berry Crumble

    This autumn fruit crumble is delicious served with thick cream or ice-cream. I use a mixture of caster and brown sugar in the crumble to give it a golden colour and extra crunch!

    Serves: 4 

    • 1 can (400g) peach halves, drained
    • 150g frozen mixed berries
    • 1/2 cup (75g) self-raising flour
    • 1/2 cup (75g) plain flour
    • 1/4 cup (55g) brown sugar
    • 1/4 cup (55g) caster sugar
    • 1 teaspoon ground cinnamon
    • 80g butter, chopped
    • 2 tablespoons flaked almonds

    1. Preheat oven to 200 degrees C. Grease a 4-cup capacity ovenproof dish. Combine the peaches and berries in prepared dish.
    2. Combine the flours, sugars and cinnamon in a large bowl. Using fingertips, rub in the butter until the mixture resembles coarse breadcrumbs. Stir in the almonds.
    3. Sprinkle the crumble over the fruit mixture. Bake for 20-25 minutes or until the crumble is golden. Serve.
