Chicken Sausage and Roasted Cabbage Tray Bake

    • cooking spray
    • 1/2 red cabbage, shredded
    • 1 large green apple, sliced
    • 1 white onion, sliced
    • 2 tablespoons olive oil
    • 1 1/2 tablespoons white vinegar
    • 1 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 8 chicken sausages

    1. Preheat oven to 220 degrees C. Grease a baking dish with cooking spray.
    2. Combine the cabbage, apple, onion, olive oil, vinegar, salt and pepper in a large bowl. Toss until well coated. Place the cabbage mixture in a single layer in the prepared baking dish.
    3. Bake in the preheated oven about 20 minutes or until slightly tender. Toss cabbage mixture and place sausages on top. Bake for 10-15 minutes or until sausages are crispy and cabbage has caramelized.
