Crispy fried zucchini and spring onion fritters are a bit like savoury pancakes. They make an easy side dish or summer starter. Serve with a dollop of sour cream and some chopped chives.

    Ingredients
    Serves: 5

    • 225g grated zucchini
    • 2 large eggs, slightly beaten
    • 2 tablespoons chopped spring onions
    • 3 tablespoons plain flour
    • 1 tablespoon grated Parmesan cheese
    • 1/2 teaspoon baking powder
    • 1/2 teaspoon salt

    1. Blot grated zucchini with kitchen paper to remove moisture. Stir zucchini, eggs and spring onion in a large bowl. Mix flour, grated cheese, baking powder, salt and oregano in a separate bowl; stir mixture into zucchini until batter is just moistened.
    2. Heat vegetable oil in a large pan over medium-high heat. Drop rounded spoonfuls of the batter into hot oil; pan fry until golden, 2 to 3 minutes per side. Drain pancakes on kitchen paper.

Soo good! I added a pinch of pepper and used a grated sweet onion, then put on the grill like a regular pancake. It only made 6 regular size pancakes so it left us wishing we had more!  -  10 Jul 2012  (Review from Allrecipes USA and Canada)

DELICIOUS! I squeezed my zucchini dry instead of using the paper towels and added some garlic powder and black pepper to the mix. Also, I ised vidalia onion instead of green b/c that's what I had on hand. These came out great! Will def be making these again! Thanks for sharing.  -  25 Jul 2012  (Review from Allrecipes USA and Canada)

Delish! I decided to make these because I didn't have the ingredients for anything else, and I am so glad I did! Savory and simple. I will be eating these for years to come!  -  09 Jul 2012  (Review from Allrecipes USA and Canada)
