Smoked Salmon and Avocado Entree

    In France, for special occasions or for guests, mini starters like this are served in small glasses called 'verrines'.

    Serves: 4 

    • 150g smoked salmon
    • 1 lemon, juiced
    • 1 sprig coriander
    • 175g soft cheese with garlic and herbs
    • 150g natural quark or Greek yoghurt
    • 1 avocado
    • 50g salted crackers
    • paprika for dusting

    1. Cut the salmon into small cubes. Mix in a bowl with half of the lemon juice. Mince the coriander and add to the salmon. Refrigerate.
    2. In another bowl, stir the cheese and quark with half the remaining lemon juice until smooth.
    3. Cut the avocado into small cubes and mix in a bowl with the rest of the lemon juice.
    4. Crush the crackers and distribute them in small glasses. On top of this put a half of the cheese, then the salmon and finally chopped avocado. Top with the rest of the cheese.
    5. Dust with paprika and serve chilled.
