No Bake Baileys® Cheesecake Balls

    Boozy chocolate coated cheesecake balls with no need to bake, they only take 15 minutes or so (if you don't include the chilling between each section).

    Makes: 20 cheesecake balls

    • 320g chocolate coated biscuits
    • 250g mascarpone cheese
    • 80ml Baileys® Irish cream
    • 300g white chocolate, roughly chopped
    • 50 to 80g dark chocolate, roughly chopped

    Preparation:15min  ›  Cook:5min  ›  Extra time:1hour30min  ›  Ready in:1hour50min 

    1. Place biscuits in a bowl and crush up as much as possible to make crumbs. Add the mascarpone and Baileys® and mix up thoroughly.
    2. Make into approximately 20 balls around 2 to 2 1/2cm wide and place in fridge to chill for around 45 minutes on a baking tray lined with baking paper.
    3. Once balls are chilled, melt the white chocolate and coat the balls in it then return to the fridge to chill.
    4. To decorate, melt the dark chocolate and drizzle it over the chilled balls.


    I use white chocolate biscuits but you can use dark or milk chocolate inside and if you find white chocolate too sweet there's no reason why you can't use milk chocolate to coat the balls too.
