Vegetarian tikka masala Curry

    A great tasting vegetarian curry the whole family will love. I originally just made this from what I had in the kitchen(as you often do). It tasted so good I wrote it down and then made it into a recipe the next time a cooked it. Im sure you could substitute many of the ingredients, but I think the chick peas and lentils are key to the taste.

    Ingredients

    • 1 Onion (½ diced ½ sliced)
    • 3 tbls Pataks Tikka Masala paste
    • 2 potatos & 1 large carrot cooked (microwave 4-5 min)
    • Can chickpeas (rinsed)
    • Can lentils (rinsed)
    • Can coconut cream 400ml
    • Can coconut milk 400ml
    • 3 Tbls triple concentrate tomato paste
    • ½ head broccoli, Chopper bite size.
    • ¼ cauliflower, Chopper bite size.
    • Hand full beans chopped
    • Tbls Masel chicken style stock
    • 3+ boiled eggs
    • Tbls oil

    Directions

    1. Fry Onion until clear in oil
    2. Add Tikka past and lightly fry off.
    3. Add coconut milks and trir through
    4. Add stock powder and bring to simmer
    5. Add cooked potato and carrot
    6. Add all other ingredients except eggs
    7. Simmer 20 min
    8. Simmer 20 min and continue to simmer a further 10 minutes.

    Tip

    Serve on rice Makes 6+ large serves Garnish with coriander and or nuts
