Banana Oat Cookies

    These flour-free oat cookies sweetened with mashed bananas and honey are a quick and easy snack that the whole family will enjoy.

    Makes: 12 cookies

    • 2 bananas, mashed
    • 1/4 cup (60 ml) milk
    • 1 egg, beaten
    • 1 teaspoon honey
    • 1/2 teaspoon vanilla extract
    • 1 cup (90 g) gluten free oats
    • 1 teaspoon ground cinnamon
    • 1/2 teaspoon gluten free baking powder
    • 1/8 teaspoon salt

    1. Preheat oven to 180 degrees C. Line a baking tray with baking paper.
    2. Mix mashed bananas, milk, egg, honey and vanilla extract together in a bowl. Stir in oats, cinnamon, baking powder and salt.
    3. Spoon cookie batter in mounds onto the baking tray, spacing them about 5cm apart.
    4. Bake in the preheated oven until the top of the cookies look dry and edges are golden, about 15 minutes.


    You can process the oats into flour if you prefer.

    This is a great healthy recipe. I did add some chocolate chips. The only problem I had had was that it was too liquidy so I doubled everything but the milk and eggs and it worked out great.  -  14 Feb 2017  (Review from Allrecipes USA and Canada)
