Creamy Coleslaw

    This will be your staple coleslaw recipe once you try it - you'll never get shop bought again!

    Serves: 8 

    • 2 tablespoons caster sugar
    • 1/2 teaspoon salt
    • 1/8 teaspoon pepper
    • 4 tablespoons milk
    • 1/2 cup mayonnaise
    • 4 tablespoons buttermilk
    • 1 1/2 tablespoons cider vinegar
    • 2 1/2 tablespoons lemon juice
    • 600g finely shredded cabbage
    • 50g grated carrots

    Preparation:15min  ›  Extra time:2hours  ›  Ready in:2hours15min 

    1. In a large bowl, whisk together the sugar, salt, pepper, milk, mayonnaise, buttermilk, vinegar and lemon juice until smooth. Add cabbage and carrots and mix until blended with the dressing. Refrigerate at least 2 hours before serving.

    No buttermilk?

    Use 4 tablespoons of natural yoghurt instead of buttermilk if desired.

    KFC's coleslaw is the only slaw I will eat, so I was so happy to find this recipe. But I did make a few changes - I cut the sugar down to 1/4 cup and left out the buttermilk (I don't like it, so I don't buy it!). I also used cider vinegar instead of white vinegar. I added some celery seed for a little extra flavor.     This was great! I hate buying a carton of buttermilk for recipes that call for 1/4 cup, so I made a substitute using regular milk & lemon juice. I also used pre-shredded cole slaw mix & let the salad marinate overnight.     The recipe I have been searching for for years! Delicious! Because of the comments of others, I was going to cut back on the milk, and I ended up forgetting to add it entirely!
