Chicken, mushroom, tomato and basil penne pasta

    My own meal derived from the classic chicken and mushroom fettuccine. Quick easy and a creamy flavorsome delight to eat with the choice to add or eliminate ingredients. Serves 4-6

    Ingredients

    • 1 brown onion (diced)
    • 300 grams shredded chicken (roughly) add as much or as little as you like
    • 1/2 cup ham or bacon (optional)
    • 1 cup cut up cherry tomatoes (or as many as you like)
    • 4 sliced mushrooms
    • 3 basil leaves, cut up
    • 300g Penne pasta
    • 375ml cream
    • 2 tsp crushed garlic or 3 cloves
    • 1/2 cup grated Parmesan cheese
    • 1 Tablespoon Olive Oil
    • 3 tsp butter or olive oil for frying

    Directions

    1. Bring 2 liters of water in a saucepan with olive oil and salt to the boil, add penne pasta and lower heat, cook pasta until desired texture.
    2. In a frying pan on medium heat with 1 tsp of butter or cooking oil, fry onion and garlic. Grate Parmesan cheese and set aside.
    3. Add 1 more tsp butter to fry mushrooms until just cooked
    4. Remove onion and mushrooms from frying pan.
    5. Finely chop shredded chicken and ham and heat in pan until slightly browned
    6. Once pasta is cooked, drain water and place back in the pot. Put on a medium heat on the element, add onion, mushroom, chicken and ham to the pasta and stir, add the cream and mix together, once heated (about 5-8 minutes) add 1/4 of the total Parmesan cheese to mix in.
    7. Finely chop basil leaves, and cut cherry tomatoes in half and mix together in the last couple minutes stirring often.
    8. Once mixed together serve. Place the remaining grated cheese on top of each serving, with a basil leaf for decoration.

    Tip

    Thank you for reading my recipe I have fussy children so I add the mushrooms and tomatoes after I have served the kids portions with just the meat, onion and cheese. You can add as much or as little of each of the ingredients as you like, but remember if you have more or are serving more you will require extra cream. This is what binds the dish together.
