Cucumber Raita with a twist

    A well thought out and tasty version of this Indian classic

    • 1 large continental cucumber -
    • 200ml greek yoghurt
    • 1 teaspoon ground cumin
    • 2 cloves garlic - crushed
    • 1/2 teaspoon Mexican Chilli powder
    • 1/4 teaspoon paprika
    • 1-2 tablespoons fresh lemon juice
    • 1/4 cup fresh coriander - chopped
    • 1/2 teaspoon salt


    1. With the cucumber - peel, deseed and grate it. In some paper towels, squeeze all the juice out the grated cucumber and set aside
    2. In a bowl, add the greek yoghurt, cumin, garlic, chilli powder and combine gently
    3. Add the cucumber, lemon juice and coriander and salt and mix gently
    4. Sprinkle the paprika and place a few whole leaves of coriander for garnish


    After step 3 - taste the mixture and adjust accordingly.
