Baked Butternut Pumpkin

    This simple baked butternut pumpkin is easy to make, delicious to eat, and looks beautiful on the plate.

    Serves: 2 

    • 1 butternut pumpkin, halved lengthwise and seeded
    • water
    • 1 tablespoon butter, divided
    • salt and ground black pepper to taste

    1. Preheat oven to 175 deg C.
    2. Place butternut pumpkin, cut sides down, in a baking dish. Pour water into dish around pumpkin halves, about 1cm up the sides.
    3. Bake in the preheated oven until tender and easily pierced with a fork, about 1 1/2 hours. Carefully remove the skin with a fork; it should be very easy to remove. Top pumpkin halves with butter and season with salt and pepper to taste.

    Cook's Note:

    To cook a large butternut pumpkin takes 90 minutes. If you have a smaller pumpkin, adjust the baking time.

    So easy, nothing needed except the flavor from the squash itself. When my kids see me come home from the grocery store with a butternut squash the immediately ask if I can cook it tonight.
