Healthy Banana Pancakes

    I'm sure everyone has seen the two-ingredient pancakes recipe circulating online; one banana and one egg (or some similar variation). The problem is, these recipes rarely work and you're left with strangely sweet scrambled eggs. These healthy banana pancakes use a few more ingredients and are far more delicious! I must warn you that despite only containing one banana, these pancakes do have a strong banana flavour and the mixture of both cinnamon and banana remind me of banana bread.

    • 1 ripe banana
    • 1 egg
    • 1/4 cup rolled oats
    • 1/2 teaspoon vanilla extract
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon baking powder
    • 1 teaspoon chia seeds (optional)


    1. Mix together all the ingredients in a blender or Nutri-bullet.
    2. Cook for about 1-2 minutes until sides begin to firm up and bubbles form then flip and cook for a further 1-2 minutes.
    3. Serve with your preferred toppings.
