Cauliflower and Broccoli Cheese Pizza Slice (Gluten Free)

    An easy, tasty, cheesy and healthy slice to have as a side dish with salsa or light meal with salad.

    • 1/2 head of cauliflower
    • 1/2 head of broccoli
    • 2 large eggs
    • 1/4 cup of grated tasty cheese
    • 1/4 cup of Parmesan cheese
    • 1 clove of garlic minced (optional)
    • Salt and pepper to taste
    • A few thin slices of Camembert cheese for topping (optional, but totally decadent)


    1. Preheat oven to 200deg C
    2. Chop cauliflower and broccoli into chunks and cook in microwave (or on stove top) until soft.
    3. Drain well and return to cooking vessel and mash the cauliflower and broccoli until smooth (a bit chunky is okay).
    4. Add the eggs, cheeses and seasonings, mix together well.
    5. Grease a baking tray and spread the mixture into middle of tray spreading it to about 1/2" thick. (The Camembert cheese slices can be placed on top if using)
    6. Bake in oven for about 20-25 mins until browned and crispy edges form.


    I've served this with tomato salsa or guacamole. Also nice as a vegetable side for a barbecue or just with salad.
