Chicken Broccoli Pasta Salad

    The first time I made this, there was raving reviews and instant requests for the recipe. Now others request that I make it every time they come for dinner. You could easily eat this salad as an entire meal!

    • 1 Rotisserie Chicken, pulled/shredded (About 3 Cups)
    • 16oz/ 500 grams Coloured Spiral Pasta, cooked as directed
    • 2-3 Cups Broccoli Florets
    • 1 Cup Chopped Pecans (or Walnuts) - can toast them for added flavour
    • 6-8 Green Onions, chopped
    • 3/4 Cup Craisins or to taste
    • 1/2 of Med to Large Purple Onion, Diced
    • 1/2 Cup Sunflower Seeds
    • 1/2 Cup crumbled, cooked bacon or salad bacon bits
    • 1 Cup Mayonnaise (For creamier salad, add 1/2 C more)
    • 1/4 Cup Apple Cider Vinegar
    • For Extra CRUNCH add 1 packet of 2-minute or Ramen Noodles broken up into small pieces (with out the flavour packet)


    1. Combine Pasta, Shredded Chicken, Broccoli Florets, Nuts, Onions, Bacon, Sunflower Seeds, Craisins, and 2-Min/Ramen noodles in large bowl.
    2. In a separate bowl, whisk together the mayonnaise, vinegar and sugar together until well blended.
    3. Pour mayonnaise dressing over the pasta mixture; toss to coat.
    4. Cover and refrigerate until chilled, if desired.
