Sugar-Free Granola Bars

    A delicious nutmeg-flavoured granola bar with no added sugar! Great for an afternoon snack. Makes 10 serves.

    • 2 cups rolled oats
    • ½ cup rice malt syrup (or honey)
    • ½ cup desiccated coconut
    • 3 teaspoons chia seeds
    • ½ teaspoon ground nutmeg
    • 1 teaspoon ground cinnamon
    • 1 teaspoon vanilla bean extract


    1. Preheat oven to 165 C and line a 25.5cm x 17cm baking dish.
    2. Add all ingredients but the rice malt syrup into a large bowl mixing them together.
    3. Add the rice malt syrup and mix until the mixture is sticky and well combined. If the mixture is not sticking enough add more rice malt syrup.
    4. Put the mixture in prepared baking dish and push down with spoon or spatula until compressed.
    5. Bake in the oven for 15 mins if you want a crunchy bar. If you want a chewy bar bake for about 10 mins.
    6. Let your bar cool for 5 mins in the dish, then take out for a further 5 mins of cooling down.
    7. Put your bar into the fridge for 10-20 minutes or until hard enough to cut.
    8. Cut your slab into bar shapes and enjoy!
    9. Store in an airtight container in the fridge.
