Vegan Date and Cashew Bites

    This simple mixture of cashews, dates, orange zest, cardamom and coconut makes a delicious sweet treat.

    Serves: 20 

    • 145g pitted dates
    • 300g raw cashews
    • 1 orange, zested
    • 1/4 teaspoon ground cardamom (or nutmeg)
    • 45g desiccated coconut, or as needed

    Preparation:15min  ›  Ready in:15min 

    1. Grind dates in a food processor until smooth; add cashews and continue to process until finely ground.
    2. Transfer the cashew mixture to a large bowl. Mix orange zest and cardamom into the cashew mixture. Divide and shape mixture into bite-size balls.
    3. Spread coconut on the bottom of a shallow dish. Roll date balls in coconut to coat.

    I saw a picture on the site under "summer recipes" that I wanted ingredients for. When I clicked on picture it took me to page full of recipes but not that one. I put in ingredients that I could see in pic but still couldn't find it. This site is frustrating.
