Spicy Tofu Salad Bowl

    This spicy tofu salad bowl recipe involves layering rice, lettuce, cucumber and tofu in a bowl and topping it with a spicy sauce for a tasty Asian-inspired meal.

    Ingredients
    Serves: 4 

    • 3 spring onions, sliced
    • 2 tablespoons soy sauce
    • 2 tablespoons toasted sesame seeds
    • 1 1/2 teaspoons Korean chilli pepper powder, or to taste
    • 1 teaspoon sugar
    • 1/2 teaspoon toasted Asian sesame oil
    • 240g steamed Japanese rice
    • 1/2 head of romaine lettuce (heart only), torn into bite-size pieces
    • 1/2 cucumber - peeled, seeded and chopped
    • 340g tofu, sliced

    1. Mix spring onions, soy sauce, sesame seeds, chilli powder, sugar and sesame oil together in a bowl until evenly combined.
    2. Place rice in a serving bowl. Toss lettuce and cucumber together and place on top of rice. Arrange tofu over lettuce and cucumber. Drizzle sesame mixture over tofu to taste.

    Note:

    It won't be the same taste if you substitute Korean chilli powder with any other chilli pepper powder - it might be too spicy for some tastes.

    Delicious! minor changes... I did not have romaine but had cabbage so I chopped it and mixed with the cucumbers. It added a great crunch and worked well with other textures.
