Barbacoa Beef Bowl

    A low GI healthy dinner idea that also tastes great! It's a burrito in a bowl.

    • 2 cups of cooked rice & quinoa
    • 2 cups of shredded Barbacoa Beef
    • 2 cups of dices cherry tomatoes
    • 1 diced avocado
    • 1 can of corn kernels
    • 1 can of blackbeans
    • 2 finely slice shallots
    • Coriander to serve
    • Dressing : 1 lime, 2 TBS olive oil


    1. Put all the ingredients in to bowl as pictured! Then dress with the lime & olive oil. The joy of leftovers :) I'll be posting a recipe for Barbacoa beef soon.
