Potato Salad with Vinaigrette

    The vinaigrette dressing for this potato salad is made with beef consomme, tarragon vinegar and vegetable oil.

    Ingredients
    Serves: 5 

    • 9 potatoes
    • 1/2 cup (125ml) vegetable oil
    • 4 tablespoons tarragon vinegar
    • 4 tablespoons beef consomme
    • 25g chopped spring onions
    • 2 tablespoons chopped fresh parsley
    • 1 teaspoon salt
    • 1 teaspoon freshly ground black pepper

    Directions

    1. Bring a large pot of salted water to the boil. Add potatoes; cook until tender but still firm, about 15 minutes. Drain, and transfer to a large bowl. Cool slightly. Peel and slice into a large bowl.
    2. In a small bowl, combine oil, vinegar, consomme, spring onion, parsley, salt and pepper.
    3. Gently toss warm potatoes with dressing. Cover and refrigerate several hours or overnight for best flavour.

    This is my recipe and I feel compelled to add a few words here. When totally different herbs, spices, vinegars and oils are used rather than what I submitted, it no longer resembles the original dish and is certainly no longer French.
