Chicken Noodle Salad in a Jar

    Layers of veggies, chicken and noodles are placed in jars with tight-fitting lids. Whenever you're ready to eat - pour in the peanut dressing, shake and enjoy!

    Serves: 6 

    • 3 carrots, peeled and julienned
    • 2 red capsicums, julienned
    • 135g chow mein noodles
    • 435g cooked chicken, shredded
    • 170g sliced cos lettuce
    • 6 (1 litre) jars with lids
    • Dressing
    • 65g creamy peanut butter
    • 3 tablespoons water
    • 2 tablespoons soy sauce (reduced salt)
    • 1 tablespoon vegetable oil
    • 1 tablespoon caster sugar
    • 2 1/2 teaspoons rice vinegar
    • 1 teaspoon ground coriander

    1. Layer sliced carrots, sliced red capsicums, noodles, shredded chicken and shredded lettuce in each jar.
    2. Whisk peanut butter, water, soy sauce, vegetable oil, sugar, rice vinegar and ground coriander in a bowl until dressing is smooth. Chill salads and dressing, covered, until ready to serve. Serve jars with dressing on the side.

    This was incredible. I simply made as a salad bowl and did not go with the jars ( although for on the go I think its a fantastic idea ). I love chicken satay with a peanut butter sauce, but admittedly wondered if a cold peanut dressing would be the same. I need not have worried it was amazing. A nice change from the normal chicken salad recipes. I would not change anything here other than perhaps going 1.5X the chicken and doubling the dressing ( but just my taste ).
