Pork Fillet with Red Capsicum and Goat Cheese

    This pork dish is not difficult to make and is so delicious! Thick slices of pork fillet are pan-fried and served with slices of red capsicum that have been sweetened with honey. Top with goats cheese and walnuts and serve with freshly boiled new potatoes and green veg.

    Ingredients
    Serves: 2 

    • 1 (350g) pork fillet, trimmed
    • salt and pepper to taste
    • 1 knob of butter for frying
    • 1 tablespoon oil for frying
    • 1 clove garlic (optional)
    • 1/2 red capsicum, sliced into thin strips
    • 1 tablespoon honey
    • a handful walnuts, chopped
    • crumbled goats cheese, to serve

    1. Slice the pork fillet diagonally into 3cm thick slices or medallions. You will probably get around 6 pieces. Season each piece with salt and pepper.
    2. Melt a knob of butter in a large pan; add the pork medallions and cook for 2 minutes on each side. Transfer them onto a sheet of foil, wrapping the foil around them. Let the pork rest for about 10 minutes.
    3. Meanwhile, add a little oil into the pan. Stir in garlic (if using) and the sliced red capsicum. Sprinkle with pepper and cook until slightly softened , about 3 minutes. Stir in honey and cook until warmed through, about 1 or 2 minutes more.
    4. Arrange the pork on a serving platter. Top each piece of pork with some goats cheese and red capsicum. Sprinkle chopped walnuts on top.
