Vegan Avocado Toast

    This is a delicious, healthy, filling breakfast dish. If you prefer a vegetarian version, you can add a poached or fried egg on top.

    Serves: 4 

    • 4 slices wholemeal bread, toasted
    • 1 avocado, halved and pitted
    • 2 tablespoons freshly chopped parsley
    • 1 1/2 teaspoons extra-virgin olive oil
    • 1/2 lemon, juiced
    • 1/2 teaspoon salt
    • 1/2 teaspoon ground black pepper
    • 1/2 teaspoon onion salt
    • 1/2 teaspoon garlic granules

    1. Scoop avocado into a bowl. Add parsley, olive oil, lemon juice, salt, pepper, onion salt and garlic granules; mash together using a fork or potato masher. Spread avocado mixture on top of each piece of toast.

    I don't like onion, so i did it without. To my taste it was too sour. I'll cook it again, as it's a very hearty and fairly quick breakfast, but I'll add less lemon juice.  -  13 Jul 2017  (Review from Allrecipes USA and Canada)


    Ok - don't let the word Vegan and avacado scare you off for breakfast. Coming from an egg and scrapple guy (yea, I live near Philly), this is awesome.
