Squid in Garlic Tomato Sauce

    The family ask me to cook this all the time. It is easy to cook.

    Ingredients

    • 2 Tablespoons olive oil
    • 3 Teaspoons freshly crushed garlic
    • 1 Onion ( chopped )
    • 2 Bay leaves
    • 500g Squid hoods cut into rings
    • 3 Tomatoes peeled and chopped
    • 1 Tablespoon tomato paste
    • 85 ml Dry white wine
    • 85 ml Water

    Directions

    1. Heat oil in fry pan,add garlic ,onion and bay leaves and cook,stirring ( until onion is soft ).
    2. Add squid and cook stirring, for about 3 minutes.
    3. Stir in tomatoes, tomato paste, wine and water.
    4. Bring to the boil, Cover and simmer gently for about 15 minutes ( or until squid is tender ).
    5. Remove bay leaf before servicing.
