    This makes a flan with 18cm diameter. If you want to make a larger flan, use more onion and extra eggs.

    Serves: 2 

    • Pastry
    • 225g wholemeal flour
    • 1 pinch salt
    • 100g vegetable fat
    • cold water, to mix
    • Filling
    • 2 large onions
    • 50g butter
    • 225g cottage cheese
    • 2 eggs
    • salt and pepper, to taste
    • 1 small tomato, sliced

    1. Pastry: Preheat oven to 200 degrees C.
    2. Sift flour and salt in a mixing bowl and rub in fat until consistency is like breadcrumbs. Add water a spoonful at a time until a firm dough forms. Line a 18cm flan tin with pastry and bake blind for 15 minutes in the preheated oven.
    3. Filling: Turn oven temperature down to 160 degrees C.
    4. Slice onions and cook in butter until soft, but not brown. Mix cheese, onion and beaten eggs then pour into flan case. Season and arrange tomato slices on top. Bake for 30 minutes.
