Chargrilled Lemon Limeade

    Once you smell the lemons and limes cooking on the barbecue, you'll believe the extra steps to this summer drink are worth the wait. Cooking the citrus fruit jumpstarts the flavour making every sip refreshing and uniquely delicious.

    Serves: 8 

    • 300g granulated sugar
    • 8 lemons, halved
    • 8 limes, halved
    • 1 lemon, sliced
    • 1 lime, sliced
    • 1L water, divided, or to taste
    • ice cubes as needed

    1. Preheat the barbecue for medium heat and lightly oil the grate. Pour sugar into a large saucepan; press halved lemons and limes cut-side down into the sugar.
    2. Set the saucepan on the bbq grate; cook until lemons and limes are browned, about 5 minutes. Use a slotted spoon to remove the lemon and lime halves to a bowl to cool. Set the saucepan aside to use later for making a sugar syrup.
    3. Place the lemon and lime slices directly on the grate; cook until charred, 30 to 60 seconds on each side.
    4. Stir 500ml water into the cooked sugar mixture in the reserved saucepan. Place back on the bbq grate; whisk until sugar has dissolved and mixture turns into a syrup.
    5. Juice halved lemons and limes into a large jug. Add 500ml water and the syrup to the juice, 150ml at a time, until the limeade achieves desired sweetness. Pour limeade into glasses filled with ice; garnish with charred citrus slice.
