Shortbread (Scottish)

    Old family recipe for shortbread. Nice and simple but very delicate flavour. Good old Scottish heritage.

    Serves: 6 

    • 250g butter
    • 3/4 cup icing sugar
    • 3/4 cup cornflour
    • 1 1/2 cups flour
    • 1/4 teaspoon salt

    Preparation:15min  ›  Cook:30min  ›  Ready in:45min 

    1. Preheat the oven to 160 degrees C.
    2. Soften the butter then add the icing sugar. Cream well.
    3. Combine the butter with the remaining dry ingredients and knead to make nice ball of dough.
    4. Roll into a sausage shape, then cut into 10 -15mm slices and lay them on baking paper covered oven tray. Light wipe with olive oil is also good to do.
    5. Bake in the preheated oven for 30 minutes. They should be pale colour or can be darker depending on your taste. If you want you can sprinkle with icing sugar when serving.
