Dulce de Leche Cake

    A smashing recipe for using gorgeous Dulce de Leche, these wee cakes make lovely, simple and sweet tea cakes.

    • 110g unsalted butter
    • 200g caster sugar
    • 125g plain flour
    • 4 tablespoons Dulce de Leche
    • 3 eggs

    1. Preheat the oven to 180 degrees C. Grease and flour a muffin tray.
    2. Melt the butter and allow to cool slightly.
    3. In the bowl of a mixer, sift in the sugar and flour. Mix and add the melted butter and Dulce de Leche. Beat until well combined.
    4. Add eggs, one at a time, beating constantly. Beat until smooth. Spoon mixture into prepared muffin tray.
    5. Bake in preheated oven for 12 minutes or until golden brown. Remove from oven and unmould while cakes are still hot.

    Dulce de Leche

    You can use shop-bought Dulce de Leche, if you can find it, or you can make your own.
