Strawberry Cheesecake in a Jar

    Serves: 6 

    • Base
    • 6 shortbread biscuits
    • 30g butter, melted
    • 2 tablespoons caster sugar
    • Topping
    • 350g strawberries, hulled
    • 225g cream cheese
    • 2 tablespoons lemon juice
    • 100g caster sugar
    • 120ml thickened cream, whipped to stiff peaks

    1. Base: Stir together biscuit crumbs, butter and 2 tablespoons sugar in a bowl.
    2. Divide the crumb mixture evenly among six (250ml) jars (about 3 1/2 tablespoons each) and gently press (do not pack) into bottoms.
    3. Topping: Halve 6 strawberries for garnish then set aside. Dice remaining strawberries.
    4. Beat together cream cheese, lemon juice and sugar in bowl with an electric mixer at medium speed until smooth. Fold in whipped cream and diced berries, then divide evenly among jars.
    5. Top each jar with 2 berry halves and cover with lids. Chill at least 2 hours and up to 3 days.

    I followed the cheesecake portion exactly, but used blackberries, blueberries, and golden kiwis. I added some strawberry sauce that I had made for another recipe and topped with more whipped cream. The cheesecake was so light and fluffy.     When some cooks start their review by saying "if I could I would give this 10 stars..", I roll my eyes thinking, drama people. Well, I am one of those poeple now. I wish I could rate this more than 5 ! I made no changes and it was a such treat. I still have more than half a box of pecan shortbread cookies to use up.
