Pour tomatos, beans, and recipe base into a large roasting tin. Mix with a wooden spoon.
Add chopped vegies. I usually add whatever veg I have in the fridge, don't limit yourself to zucchini and mushroom. I've used pumpkin, apple, capsicum, brocoli, asparagus and any tomatos that might be going soft. Mix well.
Place sausages on top of vegie mix. Poke with a knife so they don't burst. Cover with alfoil and bake in oven for 20 minutes.
Sausages will be cooked but pale. Remove sausages and cut them into chunks. Sometimes the sausage caseing bursts I have to remove those stringy bits.
Mix sausages back into the veggies and put back in the oven without the alfoil to brown the sausages. I usually leave tnem in for 10- 15 minutes.
All done! Perfectly fine meal by itself or you can serve with mashed potatoes or rice. I freeze leftovers for lunches and it reheats well in the microwave.
You can use any type of sausage. I like the thin coles homebrand beef ones because they are cheap and tasty. I've also used pork and chicken and gourmet ones.
