Super Easy Raspberry And Lemon Slice


    An insanely easy and healthy twist on a classic Australian favourite!

    • 2 cups desiccated coconut
    • zest and juice of one lemon
    • 2 tablespoons almond butter
    • 4 tablespoons honey
    • 1 cup cashew meal
    • 2 tablespoons coconut oil
    • 200 grams fresh raspberries
    • 1 tablespoon coconut milk
    • 1 teaspoon vanilla extract
    • pinch of salt


    1. Place desiccated coconut, 2 tablespoons of the honey, lemon juice and almond butter into your processor and blend until the mixture resembles a sticky crumb. Press the mixture firmly into the holes of a mini silicon muffin tray and set aside. I made 20.
    2. Place remaining ingredients into your processor and blend until the mixture is smooth and well combined. Spoon the mixture evenly over your base and place into the freezer to set and store
    3. Pop out of tray, serve and enjoy!
