200ml coconut milk
50ml almond milk
4 tablespoons chia seeds
2 tablespoons maple syrup, divided
2 small mangoes, peeled, stones removed and cubed

Combine the coconut milk, almond milk, chia seeds and 1 tablespoon of the maple syrup. Whisk for 1 to 2 minutes. Cover with plastic wrap and chill in the fridge for 1 hour, stirring occasionally.
Combine the cubed mango and remaining tablespoon of maple syrup in a food processor or blender. Blend until smooth.
Spoon the chia mixture into serving glasses. Top with the pureed mango. Enjoy straightaway or chill until serving.
