Two Ingredient Banana Pancakes

    These paleo pancakes couldn't be easier and must be tried to be believed! Simply banana and egg - no sugar, no gluten, no grain. You can also make them dairy free by frying in coconut oil instead of butter. Enjoy with maple syrup or honey.

    Makes: 2 pancakes

    • 1 knob (30g) butter
    • 1 banana
    • 1 large egg

    Preparation:5min  ›  Cook:5min  ›  Ready in:10min 

    1. Heat the butter in a large frying pan over medium heat.
    2. Mash banana in a bowl using a fork until it becomes a wet consistency. Add egg and whisk mixture until batter is smooth.
    3. Drop batter into the hot butter to make 2 pancakes. Cook until bubbles form and the edges are dry, about 3 minutes. Flip and cook until browned on the other side, about 2 minutes


    This recipe doubles easily.
    Frying the pancakes in butter creates nice crispy edges. Substitute 1 tablespoon coconut oil for the butter, if desired.

    We've been making this recipe for years!! Anyone who eats clean knows this recipe and loves it!!! I add 1 scoop of our vegan, dairy free protein powder to ours, fry in coconut oil and serve with greek yogurt and a smile.     I've been making this recipe for a while, except I use 2 brown eggs, and I do add a tablespoon of pancake mix just to thicken it up a bit. With regular pancakes, I feel sluggish and weighted down after eating them, so this recipe is great when I still want pancakes without the after effects. I normally eat bananas daily, so the bit of banana taste doesn't turn me off. I still add a little bit of butter on top, and eat them with syrup.
