Pressure Cooker Feijoada

Feijoada, the beautiful stew that is the Brazilian national dish, done in (relatively) lightning speed! Ready in an hour or so, it is all done in a pressure cooker.


Serves: 4 

  • 4 tablespoons olive oil
  • 1 onion, diced
  • 200g peeled, seeded tomatoes
  • 1 bay leaf
  • 2 cloves of garlic, minced
  • 1 pig's ear
  • 1 pig's trotter
  • salt and black pepper, to taste
  • 1/2 chorizo sausage
  • 1 sliced carrot
  • 500g dried beans (any sort you like), soaked overnight
  • 300g pork spare ribs
  • 1 paio (Portuguese smoked sausage), sliced
  • 1/2 bunch (100g) kale, chopped
  • chopped fresh coriander, to taste

  1. In a pressure cooker sauté onions, tomatoes, bay leaf and garlic in olive oil.
  2. Add the pig's ear and trotter, cover with water, season with salt and pepper, cover pot and cook for 10 minutes under pressure.
  3. Turn off the heat, remove the pressure and open the cooker. Add the chorizo, carrots, beans and pork ribs. Cover and cook for another 20 minutes under pressure.
  4. Remove the pig's ear and trotter and cut the sausages into chunks. Add sausages and chopped kale to saucepan and cook, uncovered, for another 15 minutes until kale is soft.
  5. Add the cut meats, check for seasonings and serve sprinkled with chopped coriander.


You can find paio sausage in Portugese or Latin American food markets, or if unavailable, substitute any smoked pork sausage in the recipe.
