Farofa is the typical everyday Brazilian side dish made with toasted farinha de mandioca (manioc or cassava flour). There are many variations for this farofa de ovo, the toasted cassava (manioc) flour is sautéed with butter and scrambled eggs. Lovely savoury side or breakfast dish.


Serves: 4 

  • 3 eggs
  • 2 tablespoons cold water
  • salt and ground black pepper, to taste
  • 20g butter
  • 1 onion, finely diced
  • 300g toasted cassava (manioc) flour
  • chopped green olives, to taste
  • 1 tablespoon fresh chopped parsley

  1. Beat eggs with water and season with salt and pepper.
  2. In a frying pan, melt the butter and sauté the onion. Add beaten eggs to the pan, stirring with a fork.
  3. When the eggs start to scramble, add the toasted flour and olives then mix well. Finally, stir in parsley then remove from heat and serve.
