    This is a bit fiddly to do but creates a 'just like the TV shows' smoked chicken thigh that the whole family will love.

    Ingredients
    Serves: 4 

    • 8 chicken thighs, or other chicken cuts
    • 200g butter
    • 1 foil pan
    • favourite chicken rub or herb blend
    • 1/2 cup BBQ sauce
    • 1/4 cup apple juice

    1. Check the chicken and remove and excess skin, bone shards and/or veins. Trim to create a clean presentation.
    2. Sprinkle the rub on the chicken and set aside in the fridge while you prepare the smoker and butter, about 45 minutes.
    3. Set and light the smoker with a mild wood like apple or cherry chunks. Preheat to between 95 to 100 degrees C. Melt the butter in a disposable foil tray.
    4. Place the chicken in the melted butter, the butter should come about 50% up the side of the chicken. Adjust as/if required.
    5. Cook slowly at this low temperature for about an hour. Check, the internal temperature, it should be at least 74 degrees C before this step is finished.
    6. Combine the BBQ sauce and apple juice then heat until warm, it should be fairly runny. Add this to the chicken either by brushing on, or you can dip the whole piece of chicken into the sauce.
    7. Return to the smoker for 10 to 15 minutes to allow the sauce to set on the chicken.
