Running out of time to prepare your mid-week dinner? Try this simple pasta dish with eggs, peas and lots of Gruyere cheese. It only takes me minutes to make and contains all elements of a nutritious meal, yet so easy and delicious!
In a large saucepan of boiling salted water, cook spaghetti until just al dente, or according to the instructions on the packet. Add frozen peas in the last 3 minutes. Drain well and put the back in the saucepan.
Set saucepan back on the hob over low heat. Add butter and lightly beaten eggs. Cook, mixing with a wooden spoon, until eggs are fully cooked. Mix in half of the Gruyere cheese, and season with salt and pepper.
Serve immediately and sprinkle with the rest of the Gruyere cheese.
