    Pears and fennel complement each other so well. Add the crunchiness and nutty flavour of almonds and serve it with a crusty slice of rustic bread for a delicious lunch.

    Ingredients
    Serves: 2 

    • Salad
    • 1 fennel bulb, finely sliced
    • 1 pear
    • 2 tablespoons flaked almonds
    • Dressing
    • 1 teaspoon balsamic vinegar
    • 2 tablespoons olive oil
    • salt and pepper, to taste

    1. Salad: Thinly slice the fennel bulb with a sharp knife or mandolin slicer. Peel and core the pear, then cut into thin sticks. Combine both in a salad bowl and mix well. Sprinkle with almonds.
    2. Dressing: Mix the balsamic vinegar, olive oil and salt and pepper in a small bowl. Whisk well.
    3. To Serve: Drizzle the dressing over the salad and serve.
