In the mood for a caprese salad? Try this extremely easy caprese salad, but with a tiny twist - a dollop of pesto! Just magical and so flavourful.

- 2 large tomatoes
- 2 (125g) balls buffalo mozzarella, drained
- 3 tablespoons pesto
- 2 tablespoons olive oil
- salt and pepper, to taste

- Slice the tomato and mozzarella cheese rather thick. Layer a slice of mozzarella over a tomato slice on a platter.
- Add a dollop of pesto over the mozzarella. Drizzle with olive oil and season with salt and pepper to taste.
- Chill in the fridge until time to serve.
